Blueberry Soybean Salad

Ingredients:
1 pkg frozen soybeans (edemame)
1 medium container fresh blueberries
1/2 cup chopped fresh mint
1/2 cup chopped fresh basil

Dressing:
1/4 cup blueberry-pomegranate juice
4 Tbsp apple cider vinegar
6 Tbsp olive oil
1 tsp honey

Directions:
Cook soybeans according to pkg directions, toss with dressing. Let cool.
Add mint and basil. Serve chilled.

This is better than you might think!!
