Gross, I know. But it was actually fantastic - and not entirely vegan.
Ingredients:
9 Oven-ready lasagna noodles (for 9x9 dish)
1 package firm tofu (I promise, it will not be as bad as it sounds)
16oz fresh spinach
Dried basil
Dried oregano
Garlic salt
1 Onion, chopped
1 bunch asparagus cut into 1" pieces
1/2 eggplant, chopped into 1" cubes
Your favorite premade sauce
Your favorite shredded cheese (just a little, I used a Mexican blend)
Directions:
In a food processor, pulse tofu + spinach, then
Add basil + oregano + garlic salt + sauce
In a pan, saute onions + eggplant + asparagus for about 10 minutes
Starting with sauce mix then noodles, layer all ingredients
Top with remaining sauce + cheese
Cover with foil. Bake at 375* for 40 minutes
Trust me, it is great.
