I didn't get a picture of this because it was gone before I could get the camera out! This is an update on a pasta I had previously posted - much better!
1. Boil 1 box whole wheat penne noodles - drain but SAVE the water
2. In a food processor or blender, blend 1 package fresh spinach, 5 basil leaves, leaves of 2 sprigs of rosemary, 1/3 block of fat-free cream cheese, 1 tub of low-fat feta cheese, and 2 tsp garlic powder.
3. Add in about 1 and 1/2 cups of the pasta water. I used a couple tbsp of EVOO to thicken the sauce but it's not imperative.
4. Add in about 1/2 cup whole pistachios and blend until satisfactorily chopped :-)
This is SO good and good for you!!
